If you visit Kauai, check out the Steelgrass Farm which promotes public education on the potential of diversified and sustainable agriculture in Kauai. They have also introduced the Chocolate Farm Tour where they educate the visitors to chocolate production - everything from growing the cacao trees to tasting the sweets produced. That's right, they provide blind tastings of 10 different fine dark chocolates. 
  The farm also grows bamboo, vanilla and cacao plantings but as they mature, the Lydgates' (owners) see that sustainable agriculture and diversity is a protection against storm damage and mono-crop disease vulnerability. While visiting the farm you can also see and sample the vanilla flowers, star fruit, strawberry guavas, Kau oranges, allspice and Kaffir lime and papyrus.
