Fairmont's Kitchen Pursues Sustainability

Fairmont's Hotels & Resorts have made a commitment to find creative ways to run a sustainable kitchen. This includes purchasing organic and local sustainable foods, creative recycling efforts as well as reusing and donating extras. For instance, Fairmont locations in the Pacific Northwest have partnered with an organic wine producer while British Columbia's Fairmont Waterfront, The Fairmont Vancouver Airport and The Fairmont Empress have joined the Ocean Wise program run by the Vancouver Aquarium, which promotes the use of sustainable seafood. The Fairmont Southampton and the Fairmont Hamilton Princess work closely with local fishermen to provide the best of local fish. And the Fairmont Chicago uses 200 pounds of organic ingredients weekly while the Fairmont Royal York in Toronto buys more than 22,000 pounds of local onions per year. In fact, 20% of all vegetables used at the Fairmont in Vancouver are certified organic.

P&G Sets Sales Target For Greener Products

Procter & Gamble has announced their five-year sustainability goals as part of its 2007 Global Sustainability Report. Within the report P&G reports a goal to generate at least $20 billion in cumulative sales of green products. The environmental impact of this is predicted to be at least 10% less than those of previously available products.  The company also plans to reduce it's CO2 emissions, energy and water consumption and disposed waste.

Frito-Lay Eco-Friendly

Frito-Lay has a factory in Casa Grande, Arizona where more than 500,000 pounds of potatoes arrive everyday and are washed, sliced, fried, seasoned and seperated into bags of Lay’s and Ruffles chips. The process takes up a lot of energy and creates vast amounts of wastewater, starch and potato peelings. So, Frito-Lay with the backing of it's parent company PepsiCo have come up with a new cocept - Net Zero which will attempt to take Casa Grande plant off the power grid by running it almost entirely on renewable fuels and recycled water.

Cirque du Sustainable

Cirque du Soleil has adopted a mission to be "an agent of change" says Sebastian Gautier, environmental advisor to Cirque. So far, Cirque's attempts at being green are seen as creative and well thought out. Cirque's touring production of Kooza is considering scrap costumer materials dyed in vibrant colors, sustainably transporting props, lighting and stage equipment around the world and finding a way to reuse a spent blue-and-yellow circus tent. How will they do this? Currently, scrap costume materials are placed in glass holiday ornaments and sell for $29 and the tent - all 66 foot high and 167 feet across has been sliced and diced to form messenger bags that sell for $139.

S.C. Johnson Maximizes Fleet Loads for Emissions Reductions

S.C. Johnson

A year ago, S.C. Johnson implemented a pilot program that optimizes their fleet efficiency by taking a close look at every truckload that leaves its facilities. The program titled the "Truckload Utilization Project" is a comprehensive logistics operation that aims to send out fully loaded trucks in the best configurations possible as a way of maximizing each truck's carrying capacity and shipping route. The result in one year has been a savings of $1.5 million and the reduction of greenhouse gas emissions by nearly 2,000 tons.
